Event Summary
In line with technological advances and consumer awareness, food security has shifted from hazardous management to risk management. Microbiological risk assessment is part of risk analysis, which is the process of assessing and characterizing the risks posed by food.
The workshop will provide opportunities for participants to learn and understand the principles of microbiological risk assessment in order to further enhance the knowledge, research and analysis methods used in food safety and food integrity in the future.
By the end of this workshop, participants will be able to understand the principles of food safety risk analysis through sampling and sample preparation, practice using Step Wise Risk Assessment and @RISK as well as have a greater appreciation for microbiological risk assessment techniques specifically for pathogens in food and foodborne illness.
